Favorite Breakfast

Remember how I am supposed to be working on eating healthier?  Just forget about that New Year's Resolution goal for a few minutes.  I want to tell you about my favorite breakfast.  Growing up we would always have these when my family got together (you need more than three people to eat these).

I've heard it called "SOS" but we usually just say "those english muffins with sausage and velveeta things"

It's super easy.  Promise.

- 2 packages of breakfast sausage (I do one hot and one mild, but you can do two hot or two mild)
- 1 small package of velveeta (I use the 2% kind)
- 1 package of english muffins (I use regular, not sure flavored would taste too well)

Get one mild and one hot breakfast sausage slice the end off and then run the knife or scissors down the side of the package so you don't waste sausage.  Preheat oven to 350.  Slice the english muffins in half and place on a cookie sheet.  Brown the sausage in a large pan.  Drain the grease (save a few calories right?)  I should tell you that Jimmy Dean will have less grease to drain off, but any brand works.  Cut the velveeta in cubes and melt with the browned sausage.  Evenly distribute the sausage and cheese mixture on the english muffins and pop int he oven about 20-25 minutes.

And then you have these babies... mmm.

Notice T and I already had ours on the plate
Amazing.
Let me clarify - I don't eat fatty breakfasts every day.  Typically it's oatmeal or fruit and almonds or I've recently started trying to eat eggs.  This is a big improvement coming from the child that refused to eat breakfast unless it was sweet dry cereal in front of the tv before school started!!  Yes - I was allowed to watch cartoons if I ate some form of breakfast.

PS.  I will be sharing my New Year's progress/struggles later this week.

Confession.

Remember last week how I set some goals for myself?  It's time for a confession.  I have let things get in my way (bad M) and I have pushed stuff aside and ignored others.  Since last Thursday I have ran three days, a total of 7.05 miles, 40 minutes on cardio machines, and two fifteen minute weight circuits.  This isn't really burning the amount of calories that I need to see a change.  Next week I hope to do better.  Since I did skip some days this week so I plan to buckle down more and stick to working out 5 days.
Pat on the back... I have cooked at home.... but it hasn't exactly been healthy.
Trader Joe's crab cake, 1 tbl spoon tarter, beans, and 3/4 cup of rice.  Not too bad.
Chicken, Ricotta, and Kale Pasta Bake.... found from Martha Stewarts "Everyday Food" Mag.
It looked like it had a ton of cheese, but it was all 1% ricotta.  It needed some sauce (Sorry Martha)
It was a rough day of let downs - Mimosas were in order.
Pork Chops Normandy in the making. T was skeptical with mushrooms and apples.... but it was good!
Ta-da.  So should I quit my day job yet? jk.
 Teryaki Chicken
So we are improving since we didn't go out to eat (except with my grandparents - but they are the pickiest eaters in the world).... it's just slow.  I'm okay with that, remember, I want to make lifestyle changes and those don't exactly happen overnight.  I don't expect for our tastes to change drastically but I would like to start finding healthier alternatives to some of our favorites.  Our goal next week is to try a crock pot meal.... a healthy one.  I think we are going to do red beans and rice (86 the sausage and use ground turkey).  I'll let you know how that goes (T loves spice, I'm just getting my feet wet).
